Mutton Biriyani

Ingredients:


1.1 kg Rice
2.1 kg Mutton
3.10 gms Cardamom
4.10 gms Cinnamon
5.10 gms Cumminseed
6.10 gms Cloves
7.40 gms Ginger
8.20 gms Garlic
9.100 gms Green Chillies
10.50 gms Fried Onion
11.1 bunch Coriander Leaves
12.1bunch Pudina
13.2 Lemon
14.1/4 Curd
15.1/4 kg Ghee


Preparation:

1.Wash mutton and take it in a vessel.
2.Grind green chillies, ginger, garlic, spices, fried onion, and mix them all, then add this mixture to the meat.
3.Then add curd to it, mix the stuff thoroughly. Leave the material for half an hour.
4.Take 2 litres of water in a vessel and put it on the stove.
5.When water boils well put the rice in the vessel. Take out the semi-cooked rice and spread it on the meat and spices mixture as a layer.
6.Take some more rice and spread as second layer. Finally, spread the fully cooked rice.
7.Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it on the rice.
8.Now put a plate on the vessel and seal the edges with dough.
9.Put the vessel on the stove, cook for 15 minutes on medium flame.
10.Then turn off the stove. Leave the stuff for 15 minutes.
11.Hyderabadi mutton biryani is ready to serve.

Mutton Fry

Ingredients:

1.500 grams mutton
2.1 cup yoghurt
3.3 large onions ( pyaj)
4.3 medium tomatoes (tamatar)
5.4 tsp pepper powder
6.2 tsp red chillie powder
7.6 green chillie juliennes
8.3 capsicum (shimla mirch) juliennes
9.2-3 sticks cinnamon (tuj/dalchini)
10.1 pinch garam masala
11.3tsp dhania powder
12.1/2 cup dessicated coconut (narial)

Preparations:

1.Cook Mutton with turmeric and salt till in a pressure pan till it is well cooked.
2.In a Non stick pan ,add oil .Put cinnamon stick .Fry the onions , tomatoes ,capsicum and green chillies till its partly cooked .
3.To this add curd ,dhania powder ,a pinch of garam masala powder and pepper and cook till curd gets mixed well with the other ingredients.
4.Add mutton pieces with the stock and mix well.cook till no water remains in the pan.
5.It should be totally dry .Garnish with fresh corainder leaves and dessicated coconut.

Mutton Curry

Ingredients:
warm water 2 cup
vinegar 2 tsp
pepper powder 1/2 tsp
coriander powder 1 tsp
salt to taste
clove powder 1/2 tsp
oil 3 tblsp
desiccated coconut 2 tblsp
big size onions 2
1/2 inch ginger 1
yogurt 1/4 cup
mutton 750 gms
red chilli powder 1 tsp
cinnamon powder 1 tsp
garlic 6 cloves
turmeric powder 1 tsp


Preparations:

1.Clean and wash the mutton thoroughly.
2.Remove off the excess water and cut into 1 inch cubes.
3.Cream the yogurt and turmeric powder together.
4.Mix in the mutton cubes and marinate for 3-4 hours.
5.Take off and cut one onion.
6.Slice the other.
7.Wash, take off and crush the ginger and garlic.
8.Heat up half the oil over medium heat up in a heavy bottomed pot and fry cut onion until brown.
9.Remove with a slotted spoon and keep aside.
10.Mix in the remaining oil to the pot and fry the cut onions until soft.
11.Mix in the crushed ginger and garlic.
12.Stir fry for one minute.
13.Mix in the coriander powder, cinnamon powder, clove powder, pepper powder, red chilli powder.
14.Stir fry for 1 minute over low heat.
15.Mix in 2 tblsp of water and stir fry until it evaporates.
16.Mix in the desiccated coconut stir fry for 2 minutes over low heat.
17.Mix in meat and increase the heat.
18.Stir and fry the meat for 5 minutes or until it changes colour.
19.Mix in water and bring it to a boil.
20.Cover and simmer (boil slowly at low temperature) for 30 minutes, mix in the fried onions and salt.
21.Further simmer (boil slowly at low temperature) for 30 minutes or until the meat is tender.
22.Stir in vinegar, take off from heat, serve hot.

Mutton Recepies

Mutton Burger:

Ingredients:

• 1/2 kg Minced meat
• 200 gm Red pepper
• 2 tbsp Soya sauce
• 2 tsp Garlic, chopped
• 3 tbsp Fresh bread crumbs
• 100 gm Cashewnuts, roasted
• 2-1/2 tbsp Peanut butter
• 2 Green chilli, seeded and chopped
• 3 tbsp Coriander leaves, chopped
• Oil for frying

For Sauce:
• 250 ml Chicken stock
• 1 tbsp Lemon juice
• 60 ml Coconut cream
• 4 tbsp Sweet chilli sauce
• 3 tbsp Peanut butter
• 2 tbsp Coriander leaves, chopped


How to make Mutton Burger:
• Deseed and quarter the peppers and grill till the skin blackens.
• Peel the skin and chop the peppers.
• Combine it with rest of the burger ingredients, mix well.
• Shape them into patties and chill for about 30 minutes.
• Shallow fry them in hot oil till cooked through.
• For the sauce, place all the ingredients in a pan, mix well.
• Bring to a simmer till thickened.
• Add coriander leaves to it.
• Season and serve the burgers with this sauce
